There are foods and flavours in this world that inspire artful cuisine. Fine wines, rich scotches, exotic spices, and stinky cheeses have cult like followings that delight in tasting the complex flavours each sample provides. And so it is with tree syrups.
Just like a Chardonnay from the Napa Valley is vastly different from a Chardonnay from the Niagra region, so too are the differences between syrup trees and the areas where they grow. Sap from an Eastern Sugar Maple has very different flavours and undertones compared to that of a Western Broadleaf Maple. And don’t even get us started on the fabulous birches…
One thing is certain, foodies can now rejoice that there are people (nay, artists) who enjoy savouring the sweet and delicate nectar that comes from our local forests. This emerging industry shines a new light on the age-old art of refining tree syrups. And we’re so happy to be a part of it. Learn more about our maple and birch syrups below.
The first thing that people say to us when they taste our maple syrup is “That’s soooooo delicious!” The second thing they say is “How do you make maple syrup if we don’t have maple trees out here in BC?” The truth is we DO have maple trees in BC! We have a unique breed of maple tree called the Broadleaf Maple (a.k.a. Big Leaf) which produces a beautiful tasting sap that we source in the wild to make all our maple syrup.
Although the flavour of our syrup still maintains that delicious maple taste renowned the world over, our production draws out some of the elements that can only be brought out using our artisan process, such as honey, caramel, coffee and even floral elements. Once you taste the explosion of flavour in our maple syrup, you won’t want to go back to those other brands!
Although it is still an unknown luxury to many people, birch syrup is quickly becoming the go-to flavour enhancer for meat marinades, salad dressings, sauces, glazes and yes… even pancakes. The flavour of this truly rare product is enhanced by the care we put into our artisan process, starting with the collection of the precious sap from wild trees in the forests of B.C, right down to the careful effort put in to finishing the product to ensure that only the pure taste of the Birch is left on your palette.
This unique product is both sweet and savoury and finishes with a powerful hints of cherry wood, smoke and black liquorice. The first words out of everyone’s mouth when they first taste this product is “WOW!” It is an explosion of flavour that will draw out all the elements of your favourite hearty meals.
